From The Kitchen of St. Joseph Church

HUMMOS U BATATA

Ingredients:

1  15oz can   Hummos beans (Garbanzos or Chick Peas), Skinned
1  medium     Onion (white), diced
4  medium     Potatoes, diced
1  16oz can   Tomato Sauce
1/2 16oz can  Water
1/4 cup          Olive Oil

 
  • Skin the hummus beans, breaking them in half whenever possible.
  • Sautee the onions in oil over medium-high heat until lightly browned.
  • Add the potatoes and hummos to the onions and stir.
  • Add the tomato sauce and water.
  • Stir and cover the pot.
  • Once this comes to a boil, turn the heat to medium and simmer for 15-20 minutes (until the potatoes are soft).
